I thought it would be a good idea to post some protein given that my last two posts were vegetable soups.  I made these almonds for Christmas and we loved them so much that I made some more recently, just to have handy when I need a little lift.

The recipe actually comes from a few places and you can pretty much season them however you like… they are sooooo good and you can spice based on your own tolerance of heat.

In a large bowl, whisk the egg whites until frothy, then add in and … get your hands dirty… mix the nuts well ensuring that they are all a bit wet.  Add in the seasonings/sugar and mix some more.  You’ll notice that the seasonings get a bit sticky and clump on to the nuts… this is good.

Place on baking sheet and bake at 250, check on them every 10-15 minutes and mix them and move them around, breaking them up since they will stick together.  I’ve generally only baked them until they are crunchy  30 – 45 minutes.

Place in a sealed container and enjoy by the handful!
