I’ve been so excited to get back into the kitchen and so I’m kicking off the Christmas baking season with a very traditional cookie made to be eaten quickly! Often these cookies are made, half with holes, half whole and them filled with a red jam, current, raspberry, strawberry… whatever your family likes best. No doubt though, that they are melt in your mouth wonderful… and definitely good enough to leave for Santa… 😉
I made these cookies with chunks of cranberries ad then cut them out to look like Christmas wreaths, with a little chocolate drizzle for good measure.
Citronove Linecke or Linzer Cookies with Cranberries
* makes about 100 little cookies… not nearly enough!
- 350 gr flour
- 140 gr icing sugar
- 200 gr softened butter
- 1 teaspoon vanilla
- 2 egg yolks
- 2 teaspoons lemon juice
- 1/2 Cup frozen (or fresh) cranberries – chopped
Mix all the ingredients together to form a nice soft ball (nothing too fancy here… just easy peasy). Chop the cranberries and add them in, you can mix a little or a lot, the cranberries will color the dough a little bit and for this time of year, I’m good with that. Let the dough rest overnight in the fridge.
Roll out the dough and cut out little Wreaths or another fun Christmas shape and bake on parchment at 180 degrees for about 5 – 6 minutes. Watch them, if you roll them out fairly thin like I did then they will bake quickly and go from light golden to over-baked very quickly.
Drizzle with chocolate if you like. These can also be stored in the freezer, they will keep for a couple of months if in a sealed bag. But who are we kidding, these likely won’t even make it to Christmas, I’ll be making more for sure.
Enjoy and let the Christmas baking begin!
