Green Curry Coconut Soup with Shirataki Noodles

I’ve posted about these noodles before and I’ll be posting about them again and again I’m sure and that’s because they are ZERO calories and 100% Fiber…. Yup you read that correctly and since I’m trying to decrease my cholesterol I’m renewing my vows with the clear gelatinous noodle you see here in this soup.

Green Coconut Soup with Shirataki Noodles

This soup actually takes no time at all and is quite tasty and might I even say healthy… even healthy for those of us that have some nasty numbers to fight with… ugh!  But seriously, even if you don’t need to worry about your numbers this soup is still a really good and truly quick meal.  I made a pot and then ate for lunch… and alternated with the leftover soup I had from my previous posts…  😉

  • 1 box (liter) of chicken broth (I use no salt; no fat)
  • 1 can of coconut milk
  • 1 bag of raw shrimp peeled
  • 2 cups assorted veggies
  • 1 – 2 Table (okay, or tea) spoons of Green Curry paste (the more the spicier and it doesn’t actually look green when mixed with the broth so it can be deceiving!)

Whisk the broth and milk in a soup pot on the stove to blend.  Clean your shrimp and add to the broth.  Bring to a boil. Meanwhile slice up your favorite veggies, I used; snap peas, water chestnuts, carrots, celery, cauliflower and green onions and add them as you go along.  You can add whatever floats your boat, mushrooms, broccoli (something I can’t eat) and anything else that has color.

Check on the shrimp occasionally and make sure you don’t cook too long.  As you’re checking the shrimp start adding in the green curry paste, I would suggest little by little and taste as you add more.  It can get spicy quick… just sayin…  as soon as the shrimp is cooked turn the stove off.

Grab your bag or bags of noodles and rinse them in the sink and add either to the soup pot or to bowls and serve.  You can squeeze a bit of lime in at the last minute if you like and garnish with green onions.

The one thing I love about these noodles (aside from the ZERO calories) is that they won’t get all mushy if you keep them in liquid… and that’s a bonus to the ZERO calories… did I mention that yet… and of course all the fiber.

I found some of these noodles at my local Asian market (Youngs) but if you can’t find them in your area I’ve also ordered them through Miracle Noodle and they come in a variety of shapes.
