Homemade Pasta

So it’s time I came clean and gave up my latest addiction…. I’m nervous to give it to you though because if you actually try these… once you know how incredibly simple they are… you too will be completely and fully addicted…. I’m sure of it… and you cannot hold me responsible…. I know that I only have myself to blame… and as much as I wish it weren’t true… this is one addiction I’m not going to give up easily!

For a long time now I’ve given up pasta.  Every time I ate it I felt like it just weighed me down and for a woman in her midlife, I just didn’t like it enough to sacrifice the caloric intake.  There were so many better things to eat and spend my calories on and then….

I had this craving for a carbonara, you know the really bad kind with real bacon (we only eat the healthier turkey version anymore) and cream…. but because we don’t eat pasta I didn’t have any in the house.

So I looked around the internet and made a few calls and after a little digging came up with a very simple and absolutely amazing pasta recipe.  I used to think that I needed a pasta maker and I would put it off, partly because of the cost, but mostly because I didn’t want to be encouraged to eat a whole lot of carbs.  I am in so much trouble now!  I’m ready to start running again at 5:00 am… just so I can eat this….

Three simple ingredients that you have in your cupboard right now!

  • 1 egg
  • ½ C flour
  • 1 teaspoon water

All you have to do is mix these three ingredients together…. I used 4 eggs and 2 cups of flour and 4 teaspoons of water… use a fork to mix in a bowl and as soon as it starts to come together dump out onto a floured counter and knead into a ball.  Let it rest for a bit… about 10 – 20 minutes… roll out into a thin sheet… cut with a pizza cutter and voila… amazing pasta!  Boil for about 3-4 minutes in salted water and you have the best pasta you have ever tasted… hands down… no question… no pasta maker required….

Mine was a bit thicker than you would buy, I wasn’t so concerned about it being paper thin but that also meant that it was a little chewy and it was sooooo sooooo soooo good.  I can’t even tell you how insanely terrified I am now that I have realized I don’t need a pasta maker to have this really good stuff.  And I’m not going to admit how many times I’ve made (eaten) it since my first time.  Nope… not telling… I’m just not ready to go clean any time soon…. Just thinking about it makes me shake in my boots… I’m lacing up my runners… just so I can keep up with my new lover!
