Summer Tomato Salad

This is the perfect salad when you don’t know what to do with that late summer bounty.  My mother has always had a true green thumb.  She grows vegetables and herbs amidst the rocks in her driveway, consequently I’ve been used to having an abundance of tomatoes among other things.  She plants two or three tomato plants and ends up with so many tomatoes that she doesn’t know what to do with them all.

This is one salad that we usually have in the fridge this time of year, it’s fresh light flavour  welcome to remind us of the hot summer months.

 

This is my favorite salad and I like it best when the tomatoes are fresh from the garden, chopped with fresh purple onions and a light vinigarette as below.

 

  • Fresh chopped tomatoes
  • Fresh chopped onion (I like purple but any kind will do)
  • 3/4 Cup Vinegar
  • 1/4 Cup Oil
  • 3 Tablespoons Sugar
  • Salt and Pepper to taste

Chop tomatoes and onions and put in bowl.  Mix rest of ingredients and pour over the tomatoes.  Enjoy.
