Messy Veggie Sandwich

Today I’m in the mood for something quick and yummy thus my “go to” meal when I don’t feel like cooking.  My kids have eaten these since they were very little and that’s how they came be called “messy sandwiches”.  They always fall apart when we eat them and drip and ooze tomatoes, mayonnaise and hot juice (in mine).  Mmmmm yummy.  These are also easily personalized and worked well with my kids since they each liked something different.  My daughters would trade the tomatoes for cucumbers and leave out the hot peppers.

Typically I would use the regular hot banana peppers but recently I’ve fallen in love with candied jalapeños better known as cowboy candy that I discovered at the tasty kitchen and since then I can’t stop bottling them giving them to like minded people.

Messy Veggie Sandwiches

  • Two slices of your favorite bread, toasted
  • Mayonnaise
  • Slices of Tomatoes
  • Slices of Feta Cheese
  • Slices of Avocado
  • Cowboy Candy or Hot Banana Peppers
  • Any other veggie that you crave
  • Salt and pepper to taste

Assemble into a sandwich and enjoy the dripping goodness.

* My daughter was quick to point out that I neglected to include the alfalfa sprouts she remembers eating in the sandwich.  Which just goes to show you that you can put in or leave out whatever you like!
