Shish Kabob Casserole

This is a fabulous low carb meal and great alternative for the barbeque whether you are in an apartment and don’t have one or it’s too cold outside and you want to cheat and feel a bit of summer regardless of the time of year.

 

 

 

 

  • 2 Cups of Sausage (I use Chorizo)
  • 2 Chicken Breasts
  • ½ Red Pepper
  • ½ Green Pepper
  • ½ Yellow Pepper
  • ½ Orange Pepper
  • 1 Onion
  • 2 Cups Mushrooms
  • 2 Cups Baby Squash
  • Splash of Olive Oil
  • Seasoning to taste (I use a Garlic blend)

 

Chop all ingredients into large bite sized pieces and spread them in a casserole dish in one layer.  Splash with olive oil and season with your favorite seasoning blend.  Mix thoroughly, then bake at 400 degrees for 10 – 15 minutes or until the meat is almost cooked through.  Change setting to Grill and cook until the meat is done and the vegetables are lightly caramelized, stirring occasionally.  Can be eaten as is, or served over rice or mashed potatoes.
